Instructions

  1. Step 1: Heat the oil in a large skillet over medium-high heat. Add the garlic and onion and cook for 1 minute. Add the capsicum and cook for 2 minutes, until the onion is translucent.

  2. Step 2: Turn the heat to high and add the beef. Cook, breaking it up as you go, until mostly browned.

  3. Step 3: Add the chilli spice mix. Cook until the beef is browned all over so the spices release their flavour.

  4. Step 4: Add the remaining ingredients, using 1/2 cup water for the quick cook or 1 1/2 cups for the slow cook. Bring to a simmer, then choose one of the cooking methods below.

  5. Step 5: Quick cook: simmer uncovered over medium-low heat for 20–40 minutes, until gently bubbling.

  6. Step 6: Slow cook on the stovetop: cover and simmer over low heat for 1.5–2 hours, until very gently bubbling.

  7. Step 7: Adjust the salt to taste just before serving.

  8. Step 8: Serve over rice, or ladle into bowls and serve with corn chips or warm tortillas on the side. Add your choice of toppings. Sour cream, cheese and coriander are suggested favorites.

Notes

Variations and keeping

For a slow-cooker version, follow the stovetop directions through adding the ingredients, using 1/4 cup water, then transfer everything to a slow cooker. Cook on low for 6 hours; 8 hours is also given as an option.

For another option, replace the water and beef bouillon cubes with 3 cups full-salt beef broth or stock. Cook long enough for the sauce to reduce, then taste and add salt if needed.

The chilli keeps well and freezes well; it tastes even better the next day.
