Instructions

  1. Step 1: Heat the oil and melt the butter in a skillet over medium-high heat. Add the mushrooms and cook until golden brown, about 4 to 5 minutes. There’s no need to stir constantly.

  2. Step 2: Just before the mushrooms are done, add the garlic and a pinch of salt and pepper. Cook until the garlic is golden, about 1 minute.

  3. Step 3: Add the white wine or rosé. Stir for 1 minute, scraping the bottom of the skillet, or until the wine is mostly evaporated.

  4. Step 4: Add the broth, cream and parmesan. Stir, then lower the heat to medium so the sauce simmers. Do not let it boil rapidly, or the cream may split.

  5. Step 5: Stir occasionally and simmer for 2 to 3 minutes, until thickened. The sauce should remain rich rather than very thick.

  6. Step 6: Stir in the thyme and adjust the salt and pepper to taste. Remove the skillet from the heat.

  7. Step 7: Serve over steak or another cooked protein. Toss with pasta, spoon into baked potatoes, serve with roast beef, chicken or pork, or spoon over omelettes.

Notes

Ingredient notes

  • Use any kind of mushrooms. Use more if you’re stuffing baked potatoes.

  • Choose a dry white wine or rosé; avoid sweet or woody, oaky wines. To make the sauce without wine, use an extra 1/4 cup broth and keep the parmesan.

  • If heavy or thickened cream isn’t available, use cream with at least 30% fat. For regular low-fat cream, mix 1 teaspoon cornstarch with a splash of the cream until dissolved, then mix in the remaining cream.

  • Finely grate the parmesan so it melts into the sauce.

For a lighter version, use low-fat thickened cream.
