Notes
Helpful notes
For the herbs, use 3/4 teaspoon mixed dried herbs or other herbs of your choice. Rosemary can replace the thyme.
You can use another clear vinegar, including white balsamic vinegar. Taste the dressing and adjust with more oil or vinegar if needed.
To prepare ahead, chop the tomatoes and bocconcini and make the dressing. Prepare the basil leaves but leave them un-torn; assemble just before serving.
The recipe uses about a 1:2 ratio of bocconcini to cherry tomatoes by weight. Adjust the amount of mozzarella to taste.

About this recipe
This Caprese salad pairs cherry tomatoes, fresh mozzarella, and basil with a garlic-herb vinaigrette. A final drizzle of balsamic glaze adds a sweet-tangy finish.

Use baby mozzarella, also called bocconcini or cherry mozzarella. Halving the mozzarella and tomatoes makes them similar in size. Serve the salad as a side, with crusty bread, or on toast with avocado.
