Instructions
Step 1: Cut the tomatoes into 8 or 10 wedges, removing the core. Place them in a large bowl.
Step 2: Sprinkle the eschalots, garlic, salt and pepper over the tomatoes. Drizzle with the olive oil and vinegar.

Step 3: Gently toss to coat the tomatoes. Add the basil and toss again to distribute it.

Step 4: Transfer to a serving bowl and serve immediately.
Tip: Serve with bread for mopping up the tomato juices.
Notes
Ingredient options
If you don’t have basil, use a pinch of dried oregano. For the shallots, substitute the finely minced white part of green onions or very finely minced red onion. Apple cider, sherry or champagne vinegar can replace the white wine vinegar; balsamic vinegar also works but will stain the tomatoes brown.
This salad is intended for regular tomatoes. For cherry or grape tomatoes, choose a recipe designed for those smaller tomatoes.

About this recipe
This fresh tomato salad builds its flavor right on the tomato wedges: minced shallots, garlic and salt go on first, followed by olive oil and vinegar. Basil finishes the salad.

Use ripe tomatoes; heirloom tomatoes add color. Serve the salad straight away, with bread alongside for the tomato juices.
