Instructions

  1. Step 1: Heat the oil in a very large pot (6 L/qt) over medium-high heat. Cook the onion, leek, celery, garlic and fennel for 5 minutes, until softened.

  2. Step 2: Add the allspice and cumin, and cook for 1 minute.

  3. Step 3: Add the water, potato, broccoli, salt and pepper. Stir, bring to a simmer and simmer uncovered for 7 minutes, until the broccoli is tender.

  4. Step 4: Add the peas and simmer for 1 minute.

  5. Step 5: Remove the pot from the stove. Add the kale and push it under the liquid, then blend with a stick blender until mostly smooth. Add the spinach, push it under the liquid and blend again until as smooth as possible, about 3 to 5 minutes. The soup will be smooth with little green bits for texture.

Notes

Storage and substitutions

Refrigerate for up to 5 days or freeze for up to 3 months. Peas can be replaced with more broccoli, fennel or potato. Use more baby spinach or kale in place of kale, or English spinach in place of baby spinach. For a dairy-free version, use vegan cream, coconut cream or coconut milk; coconut adds a touch of coconut flavor.
