Notes
Swaps and storage
Use cider vinegar or white wine vinegar instead of rice vinegar.
Use ordinary all-purpose or light soy sauce; avoid dark soy sauce.
Replace the fish sauce with more soy sauce, and replace the lime juice with more rice vinegar.
Use another neutral-flavoured oil instead of peanut oil.
Keep the dressing separate from the salad for storage. The salad keeps for 3 to 4 days, depending on the freshness of the bean sprouts.
About this recipe
This crunchy slaw combines shredded cabbage and carrots with bean sprouts, mint and coriander. A bright dressing of soy, rice vinegar, lime and garlic brings it together.

Serve it as a side, or add the shredded cooked chicken for a meal. Crispy fried shallots add a salty, crunchy finish.
