Instructions
Make the soup
Step 1: Melt the butter in a large pot over medium-high heat. Add the onion and garlic and cook for 3 minutes, or until the onion is softened.
Step 2: Add the flour and mix it into the onion mixture. Cook for 30 seconds.
Step 3: While stirring, slowly pour in the milk and keep mixing as the mixture turns into a thickish, mostly smooth paste. Use a whisk to smooth it out if needed.
Step 4: Add the chicken stock, water, salt and pepper. Stir, then add the potato.
Step 5: Bring the soup to a simmer, then adjust the heat to maintain a gentle simmer. Cook uncovered for 8 minutes, or until the potato is almost cooked. Stir occasionally so the base does not catch.
Step 6: Add the broccoli and stir. Cook for 2 minutes, or until it is cooked to your liking, then take the pot off the heat.
Step 7: Stir in the cheese; the broth should thicken. Add more salt if needed.
Tip: The recipe uses 1 cup of cheese.
Step 8: Ladle into bowls and top with the garnishes of your choice.
Notes
Variations and storage
For a gluten-free version, omit the flour and use gluten-free broth. Mix 2 tablespoons of cornstarch or cornflour with a splash of water to make a slurry, stir it into the soup toward the end, and cook for a couple of minutes to thicken.
Cauliflower or broccolini can replace the broccoli. Other vegetables can also be used if they cook through within the recipe time.
Refrigerate for 4 to 5 days, or freeze. Thaw frozen soup and reheat gently so the potatoes do not become overly soft.

About this recipe
This hearty soup combines broccoli and potato in a thick, creamy broth made without cream. Butter and flour form the roux that thickens the milk and stock, while cheese adds flavor and further thickens the soup.

Cook the potatoes before adding the broccoli so both vegetables can finish cooking without overcooking the broccoli.
