Instructions
Step 1: Put the oil and bacon in a pot. Turn the stove to medium-high and cook until the bacon is golden on both sides.
Step 2: Remove the bacon and chop it once it has cooled.
Step 3: If there is a lot of excess fat in the pot, drain some.
Step 4: Add the garlic and stir for 20 seconds. Add the creamed corn, corn kernels, chicken stock, milk, potato, salt and pepper.
Step 5: Stir, bring the soup to a simmer, then reduce the heat to medium. Simmer for 5 minutes, until the potato is just tender.
Step 6: Mix the milk and cornflour together, then pour the mixture into the soup.
Step 7: Stir and simmer for 1 minute, until the soup thickens.
Step 8: Add more salt if needed.
Step 9: Ladle the soup into bowls and top with the green onion and bacon.
Notes
Use an emptied corn can to measure the milk and chicken stock.
To make the soup vegetarian, leave out the bacon and use vegetable broth instead of chicken stock.
