Instructions
Method
Step 1: Melt the butter in a large pot over medium heat.
Step 2: Add the garlic and onion and cook for 5 minutes, until translucent but not golden.
Step 3: Add the carrots and stir through.
Step 4: Turn the heat to high and add the wine. Stir, then let it simmer rapidly until mostly evaporated.
Step 5: Add the flour and stir for 30 seconds, until it becomes sludgy.
Step 6: Slowly pour in the broth while stirring to dissolve the paste, then stir in the milk.
Step 7: Add the potatoes, corn, salt, and pepper. Bring to a simmer, then turn the heat down so the soup simmers gently.
Step 8: Cook, stirring occasionally, for 8 minutes or until the potato is almost cooked.
Step 9: Add the fish and peas. Simmer for 3 minutes or until the fish is just cooked and flakes easily.
Step 10: Adjust the salt and pepper to taste. If the soup is too thick, add a little water or milk.
Step 11: Serve garnished with green onions, with crusty bread on the side for dunking.

Notes
Fish and broth options
Choose a firm fish such as snapper, barramundi, tilapia, basa, cod, ling, monkfish, marlin, gurnard, leatherjacket, Spanish mackerel, shark, or salmon. Delicate fish can fall apart in the soup, while lean fish may turn dry.
For the broth, homemade or good-quality store-bought fish stock is a first choice; clam juice or chicken broth are alternatives. Use liquid stock rather than stock cubes or bouillon powder.
You can swap in other vegetables, adding them according to their cooking time.
