Instructions

Prawn burgers

  1. Step 1: If using frozen prawns, thaw them thoroughly and discard the excess water. Chop the prawns into 8 mm / 1/3-inch pieces.

  2. Step 2: Put half the prawns and the garlic in a jug large enough to fit the head of a stick blender. Blend to a paste; it does not need to be completely smooth.

  3. Step 3: Scrape the paste into a bowl. Mix in the chopped prawns, green onion, salt and pepper. The mixture will be soft; it firms up as it cooks, and the shaping method makes it manageable.

Prawn mixture stirred with green onion and formed into a ball.
  4. Step 4: Put the egg and flour in separate shallow bowls, and spread the panko on a plate with room to press the patties into it.

  5. Step 5: With slightly wet hands, roll the mixture into 4 balls. Coat each ball in flour, then egg, letting excess egg drip off. Press it into a patty in the panko, making it slightly larger than the bun because it will shrink a little. Turn it with a spatula, press the panko on and coat the sides. Transfer it with the spatula to a plate and repeat with the remaining balls.

  6. Step 6: Heat the oil in a large non-stick pan over medium-high heat. Cook the patties for 2 minutes on each side, until golden, then transfer them to a paper towel-lined tray.

  7. Step 7: Spread sauce on the bottom half of each bun. Add a prawn patty, sliced gherkins and shredded lettuce. Spread sauce on the top half of the bun and place it on top. Serve with fries if you like.

Notes

Make-ahead and storage

Bread the patties and keep them on a plate in the refrigerator for a few hours before cooking. The panko absorbs moisture as it sits, so bread them well and avoid making them too far ahead. Cooked patties keep in the refrigerator for 3 days; pan-fry to re-crisp the coating. The patties are not suitable for freezing.

For frozen prawns, thaw them thoroughly and drain away excess water. The recipe notes that frozen prawns lose about 70–100 g (about 20%) as they thaw. If peeling whole raw prawns yourself, allow 700 g with heads and shells to yield approximately 400 g of prawn meat.

If using larger buns, make the patties larger and thinner. The recipe notes that smaller buns are easier to handle because the patties are soft.

The patty mixture is soft before cooking. Slightly wet hands and coating each ball before flattening it in the panko make it easier to shape.
