Instructions

Instructions

  1. Step 1: Mix the sauce ingredients together.

  2. Step 2: Heat the oil in a large skillet over high heat. Add the onion and garlic and cook for 1 1/2 minutes, until they are starting to turn golden.

  3. Step 3: Add the chicken and cook just until the outside mostly changes from pink to white.

  4. Step 4: Add the sauce and cook for 1 minute, until the chicken is quite caramelised.

  5. Step 5: Add the carrot and capsicum and cook for 1 minute. The chicken should now be nicely caramelised.

  6. Step 6: Push the chicken and vegetables to the side to make space for the noodles. Add the water and place the noodles in it.

  7. Step 7: When the water starts simmering around the edges, leave the noodles for 45 seconds, then turn them over.

  8. Step 8: Leave the noodles for 30 seconds, then untangle them and toss them through the chicken and vegetables.

  9. Step 9: Add the cabbage and toss for 1 minute, until the sauce reduces to coat the noodles and the noodles are cooked.

Tip: Cook the noodles according to the packet time. Add a little more water if they need longer.

  10. Step 10: Serve immediately, garnished with green onions.

Notes

Substitutions

  • Chicken breast or tenderloin can replace chicken thighs. Chicken thighs are juicier and caramelise well.

  • If you cannot find dark soy sauce, use another soy sauce; the sauce will be lighter in colour.

  • Mirin can be replaced with Chinese cooking wine or dry sherry. Alternatively, use 1/2 cup water and 3/4 cup low-sodium chicken stock instead of 1 1/4 cups water, and leave out the mirin.

  • Fresh or other dried noodles, including rice or wheat noodles, can be used. Cook them according to the packet, use about 2 packed cups, then toss them with the cooked chicken and vegetables with a splash of water; do not use the one-pan noodle-cooking method.
