Equipment

  • Food processor
  • Bowl
  • Large frying pan

Instructions

  1. Step 1: For an extra-smooth sauce, combine the marinade ingredients except the chicken in a food processor and blend until smooth. This step is optional.

  2. Step 2: Combine the marinade ingredients with the chicken in a bowl. Cover and refrigerate overnight or for up to 24 hours; marinate for at least 3 hours.

  3. Step 3: Heat the ghee, butter or oil in a large frying pan over high heat. Lift the chicken out of the marinade without wiping or shaking the marinade off. Do not pour the marinade left in the bowl into the pan.

  4. Step 4: Add the chicken to the pan and cook for around 3 minutes, or until it is white all over. The chicken may not brown because of the marinade.

  5. Step 5: Add the tomato passata, cream, sugar and salt to the pan, along with any marinade remaining in the bowl. Turn the heat to low and simmer for 20 minutes. Taste and add more salt if needed.

  6. Step 6: Garnish with coriander or cilantro leaves, if using. Serve with basmati rice.

  7. Step 7: Serve with flatbread and no-fry papadums, if desired.

Notes

For a lighter sauce, use 3/4 cup light cream and 1/4 cup milk instead of the heavy cream. If tomato passata is unavailable, blend canned tomatoes until smooth. Ghee can be replaced with butter or a neutral-flavored cooking oil.

Serve with white rice if preferred. Flatbread and papadums are also suggested accompaniments.
