Instructions
Sauce
Step 1: Mix the cornflour and soy sauce together, then mix in the remaining sauce ingredients.
Step 2: Alternatively, use 1/3 cup Chinese all-purpose stir-fry sauce if you have it.
Chicken and noodles
Step 3: Pour 1 tablespoon of the sauce over the chicken and mix to coat. Set aside to marinate for 10 minutes.
Step 4: Prepare the noodles according to the packet instructions, then drain. One packet used for this recipe directs soaking in boiled water for 1 minute.
Cooking
Step 5: Heat the oil in a wok or large frying pan over high heat.
Step 6: Add the garlic and stir-fry for 10 seconds, or until it starts to turn golden. Don’t let it burn.
Step 7: Add the chicken and stir-fry until the surface is lightly browned while the inside is still raw, about 1 minute.
Step 8: Add the cabbage, carrot and the white parts of the green onions from the base of the stalks. Stir-fry for 1 1/2 minutes, until the cabbage is mostly wilted.
Step 9: Add the noodles, sauce and water. Stir-fry for 1 minute, tossing constantly.
Step 10: Add the bean sprouts and remaining green onions. Toss for 30 seconds or until the bean sprouts just start to wilt.
Step 11: Remove from the heat and serve immediately.
Notes
Chicken thigh, breast or tenderloin can be used. For other proteins, the recipe notes suggest sliced pork, beef or turkey, whole prawns or ground meat.
Green, Chinese or savoy cabbage can be used. Mirin is an alternative to Chinese cooking wine; reduce the sugar to 1 teaspoon when using it. Dry sherry is another option. For an alcohol-free alternative, use chicken stock in the sauce and replace the water with chicken stock.
Tamari is listed as a gluten-free substitute for soy sauce. Use ordinary all-purpose or light soy sauce, not dark or sweet soy sauce.

About this recipe
This chicken chow mein brings together thin noodles, chicken, cabbage, carrot and bean sprouts in a savory sauce. Have the ingredients ready before you start cooking.

Prepare the sauce first, then cook everything quickly in a wok or a large frying pan. If chow mein noodles aren’t available, thin egg noodles, thin spaghetti or instant noodles without their seasoning packet are alternatives.
