Instructions
Step 1: Preheat the oven to 180°C/350°F.
Step 2: Grease a 10-cup-or-larger casserole dish with butter.
Step 3: Put the milk, sugar and vanilla in a saucepan over medium-high heat. Bring to a simmer, stirring to dissolve the sugar, until the surface is foamy. Do not let it boil, or it will split.
Step 4: Put the rice, sultanas and cinnamon in the casserole dish. Pour over the milk mixture, stir briefly, then cover with a lid or foil.
Step 5: Bake for 1 hour, stirring every 20 minutes to break up any rice that starts to set on the base.

Step 6: After 1 hour, remove the dish from the oven and add the cream. Stir well. The pudding may look a little watery at first, but it thickens quickly as it evaporates.
Step 7: Serve immediately, plain or with a scoop of vanilla ice cream.
Notes
Variations and storage
Use sultanas or raisins; other dried fruit can also be used.
For a coconut variation, replace the dairy milk with 2 cups coconut milk and 1 cup water. Leave out the cinnamon, stir lime zest through at the end, and serve with pineapple or mango.
For arborio rice, add 1 cup (250 ml) water to the saucepan with the milk and bake for 1 hour 20 minutes.
The pudding firms as it cools. Reheat it in the microwave with a splash of water to loosen it.

About this recipe
This creamy cinnamon rice pudding bakes in the oven with sultanas and uncooked medium-grain rice. Stir in cream at the end, then serve it straight from the dish or with vanilla ice cream.

For the softest, creamiest texture, use uncooked medium-grain white rice. Stir the pudding every 20 minutes as it bakes.
