Instructions

No rinsing

  1. Step 1: Put the rice and water in a medium saucepan with a tight-fitting lid. Bring to a rapid simmer over medium-high heat without the lid.

  2. Step 2: Reduce the heat to low or medium-low so the rice simmers gently, then cover. Do not lift the lid while it cooks.

  3. Step 3: Cook for 12 minutes or until the water is absorbed. Tilt the pot to check; if the lid is not glass, lift it briefly to check.

  4. Step 4: Keep the lid on and remove the pot from the heat. Let the rice stand for 10 minutes, then fluff with a rubber spatula or rice paddle and serve.

Rinsed rice

  1. Step 5: Put the rice in a bowl, fill it with water, and swish. When the water turns cloudy, drain it. Repeat 2 to 3 more times until the water is fairly clear; it will not become completely clear.

  2. Step 6: Drain the rice in a colander, then transfer it to a saucepan.

  3. Step 7: Add 1 1/4 cups of water minus 2 tablespoons per cup of rice. Follow the cooking steps in the No rinsing section.

Notes

A medium saucepan with a tight-fitting lid is suitable for up to 2 cups of rice. For 3 cups of rice or more, use a pot. If bubbles overflow, reduce the heat. A glass lid makes it easier to check the rice without lifting the lid.

If you rinse the rice, use 1 1/4 cups of water minus 2 tablespoons per cup of rice. The rice will not become completely clear as you rinse it.
