Notes
For day-old rice, cook the rice ahead and let it dry out before making the fried rice. In a hurry, spread freshly cooked rice on a tray to cool, freeze it for 1 hour, then thaw it.
The rice reheats well in the microwave or covered in the oven.
For an optional protein addition, the recipe notes suggest adding about 150 g (5 oz) of chopped chicken or prawns during the onion cook. For egg, cook 2 whisked eggs as an omelette, remove and chop it, then toss it back in at the end.

About this recipe
Sweet pineapple, jasmine rice and colorful vegetables make this Thai-style fried rice a lively side dish. Choose one of the three sauce combinations, then cook everything quickly in a wok or large skillet.
Use day-old cooked rice for less-sticky fried rice. Fresh or canned, drained pineapple both work.
