Instructions

  1. Step 1: Heat the oil in a large wok or large skillet over medium-high heat. If using a skillet, add 1 tablespoon extra oil.

  2. Step 2: Add the garlic and onion and stir-fry for 30 seconds.

  3. Step 3: Add the prawns and the white part of the green onions. Stir-fry for 1 minute.

  4. Step 4: Push everything to one side of the wok or skillet. Pour the egg onto the other side and scramble quickly, for about 20 seconds.

Four stages of making fried rice in a wok, including scrambling the egg beside the other ingredients.
  5. Step 5: Add the rice and your chosen sauce. Stir-fry for 2 minutes, adding the green part of the green onions halfway through, until all the rice is coated with sauce.

  6. Step 6: Serve immediately, garnished with fresh coriander, with tomato wedges and cucumber slices on the side.

Notes

Rice and protein options

Use cooked, cold rice; it is best refrigerated overnight. If needed, spread freshly cooked rice on a tray and chill it in the freezer or refrigerator until cold. One cup of uncooked rice makes three cups cooked. Jasmine rice is traditional for this dish, but long-grain or medium-grain rice can also be used.

Use prawns or chicken, or substitute firm tofu. If using chicken, cut it across the grain for tender pieces. Small prawns can be cooked or raw; chop larger prawns before cooking.

Sauce choices and extras

  • Soy sauce and oyster sauce make a combination associated with Thai home cooking.

  • Fish sauce, oyster sauce, and sugar make a sauce without soy sauce.

  • Light soy sauce and Thai seasoning sauce are commonly used in Thai restaurants in Australia.

  • Add leafy Asian greens or other vegetables, chopped red chilli with the garlic, or chilli paste with the sauce.
