Instructions
Step 1: Heat about 1 1/2 tablespoons oil in a wok, or 2 tablespoons oil in a skillet, over high heat until smoking.
Step 2: Add the onion, garlic and bacon. Cook until the bacon is light golden, about 1 1/2 minutes.
Step 3: Add the vegetables; they can still be frozen. Cook for 2 minutes so they defrost and the water evaporates.
Step 4: Add the rice and sauce ingredients. Cook for 1 1/2 minutes, until the liquid evaporates.
Step 5: Push the rice to one side of the wok or skillet. Add 1/2 tablespoon oil to the cleared space. Shift the wok so the heat is centered over that space. Pour in the egg and scramble it until fully cooked; do not leave it soft-scrambled.
Step 6: Add the green onion and stir the egg into the rice. Remove from the heat and serve immediately.
Notes
Ingredient and skillet options
Use any diced vegetables you like. For leafy greens, cut the stems into small pieces and the leaves into 2.5 cm (1 inch) pieces.
Long-grain white rice is suggested for Chinese fried rice, but other cooked, cold rice, including brown rice, can also be used.
Mirin, cooking sake or dry sherry can replace the Chinese cooking wine.
For a gluten-free version, use gluten-free soy sauce and oyster sauce.
For a skillet, the recipe notes suggest adding about 1/2 tablespoon extra oil at the start. A large skillet can be used to scale up the recipe by 50%; toss the rice with two wooden spoons.

About this recipe
This quick fried rice combines egg, bacon and vegetables with a savory sauce of Chinese cooking wine, oyster sauce and soy sauce. Serve it as a side or enjoy a bowl as a meal.

Cold, cooked rice gives the fried rice a better texture. Use frozen or fresh diced vegetables, and cook in a wok or a large skillet.
