Instructions

  1. Step 1: Heat the oil in a large skillet or wok over high heat.

  2. Step 2: Add the chilli and garlic and stir for 10 seconds.

  3. Step 3: Add the onion and cook for 1 minute.

  4. Step 4: Add the chicken and cook until it mostly turns white. Add 1 tablespoon kecap manis and cook for a further minute, or until the chicken is mostly cooked through and a little caramelized.

  5. Step 5: Add the rice, 2 tablespoons kecap manis and shrimp paste, if using. Cook, stirring constantly, for 2 minutes, until the sauce reduces and the rice grains begin to caramelize.

  6. Step 6: Serve with your choice of garnishes, such as green onion, red chilli or fried shallots.

Serving

  1. Step 7: Serve as a side dish with Asian main dishes or as part of a larger spread.

  2. Step 8: To serve it as a meal in traditional Indonesian style, add a sunny-side-up fried egg, tomato wedges and cucumber slices.

Notes

If you can’t find kecap manis, make it by simmering 1/4 cup ordinary soy sauce with 1/4 cup brown sugar until it reaches a maple-syrup consistency. It thickens more as it cools.

For a gluten-free version, make the kecap manis with tamari. Shrimp paste can be left out; the notes also suggest replacing it with 1 tablespoon fish sauce or more kecap manis.

Refrigerate leftovers for a day or two. To refresh rice that has become dry, sprinkle it with water and microwave until steamy and moist. Use the same approach after freezing.

About this recipe

Nasi goreng gets its dark, caramelized color and sweet-savory flavor from kecap manis, an Indonesian sweet soy sauce. Cold, day-old rice helps the grains fry without becoming sticky.
