To Cook

Equipment

  • Rolling pin (optional)
  • Zip-top bag
  • Plate or bowl
  • Large skillet
  • Barbecue grill
  • Aluminum foil

Instructions

Preparation

  1. Step 1: Use your fist or a rolling pin to pound the thick end of each chicken breast to about 1.7 cm (2/3 inch) thick. This is not needed for chicken thighs.

  2. Step 2: Place the chicken and marinade in a zip-top bag. Massage the bag to distribute the marinade evenly. Set the bag on a plate or in a bowl and refrigerate for 24 hours, with 12 hours as the minimum and 48 hours as the maximum.

  3. Step 3: Remove the chicken from the marinade and discard the marinade. Choose one cooking method below.

Cook

  1. Step 4: Stovetop: Heat the oil in a large skillet over medium-high heat. Cook the chicken for 3 minutes per side, or until caramelized and golden brown.

  2. Step 5: Barbecue: Brush the grill grates with oil and heat the barbecue to medium-high, or medium if your barbecue runs hot. Cook the chicken for 3 minutes per side, until caramelized.

  3. Step 6: Oven: Preheat the oven to 425°F (220°C). Bake the chicken for 15 minutes, then switch the broiler or grill to high and cook for 3 minutes to caramelize the surface and finish cooking.

Tip: The stated cooked internal temperature is 165°F (75°C).

Rest and Serve

  1. Step 7: Transfer the chicken to a serving plate, cover loosely with foil, and rest for 3 minutes.

  2. Step 8: Garnish with extra cilantro, lime wedges, and chilli if desired, then serve.

Notes

To prepare ahead, place the chicken and marinade in a zip-top bag and freeze it. Defrost it in the refrigerator overnight; it will marinate as it thaws.

Finely chopped fresh chilli or chilli paste can be added to the marinade for extra heat.
