For 3 servings
Equipment
- Medium saucepan
- Tight-fitting lid
- Fork
Instructions
Step 1: Put the rice and water in a medium saucepan over medium-high heat, uncovered.
Step 2: Bring the water to a simmer. The edges should bubble, the middle should ripple, and the surface should foam.
Step 3: Cover with a tight-fitting lid, then turn the heat down to medium-low. Use low heat if your stove runs strong.
Step 4: Cook for 12 minutes without lifting the lid.
Step 5: Tilt the saucepan and take a quick peek to check that all the water has been absorbed. Be quick, then clamp the lid back on.
Step 6: Remove the saucepan from the heat and leave it covered for 5 to 10 minutes. Fluff the rice with a fork.
Step 7: For larger batches, allow slightly more cooking time: about 13 minutes for 2 cups of rice and about 15 minutes for 4 cups. Use a pot.
Notes
For rice bought from sacks at markets, rinse it in a bowl of water, swishing for 10 seconds, and repeat three times. Drain it well in a colander and reduce the cooking water by 2 tablespoons.
For larger batches, use a larger pot rather than a small saucepan. Cooking times may vary with the quantity.
