Instructions

  1. Step 1: Mix the marinade ingredients in a bowl. Add the chicken and toss to coat. If time permits, marinate for 24 hours; otherwise, continue to the next step.

  2. Step 2: Preheat the oven to 200°C/390°F (180°C fan-forced).

  3. Step 3: Place the potatoes and onion in a baking pan and top with the chicken. Pour over the chicken stock, then the marinade from the bowl.

  4. Step 4: Bake for 20 minutes, then remove the pan from the oven.

  5. Step 5: Scatter the cherry tomatoes over the pan. Drizzle everything with 1 tbsp olive oil and sprinkle with salt and pepper. Bake for a further 30–35 minutes, until the chicken is golden and the potatoes are cooked.

  6. Step 6: Remove from the oven, garnish with fresh oregano if using, and serve.

Notes

Ingredient and pan notes

Use starchy potatoes so they cook through in time. If using waxy or baby potatoes, give them a 20-minute head start in the oven before adding the other ingredients.

Arrange the ingredients snugly in the pan to help keep the sauce from evaporating. For another cut of chicken, boneless skinless thigh fillets can go into the pan 20 minutes into baking. Chicken breast is not recommended, but if using it, add it for the final 20 minutes.

The Dijon mustard is optional. You can use rosemary or thyme in place of oregano, or add cumin and coriander for a Middle Eastern variation. Other vegetables mentioned as options include zucchini, pumpkin, sweet potato and corn cobs.
