Instructions
Preparation
Step 1: Heat the oil over high heat; you can skip it if the bacon is very fatty. Add the bacon and cook for 2 minutes.
Step 2: Add the onion and garlic. Cook for 3 minutes, until the onion and bacon are golden.
Step 3: Add the remaining ingredients. Stir, bring to a simmer, then cover.
Step 4: For the stovetop method, reduce the heat to medium-low and simmer gently for 1 hour, stirring occasionally so the bottom does not catch. Alternatively, bake at 160°C/325°F for 60 minutes.
Step 5: For the slow-cooker option, reduce the water to 1/4 cup, transfer the mixture to a slow cooker, and cook on low for 6 hours.
Step 6: The sauce should be thickened and glossy. If it is not thick enough, cook uncovered for a little longer. Adjust the salt and pepper to taste at the end.
Notes
Ingredient options
Use red kidney beans, pinto, navy, northern, cannellini, or another small-to-medium bean. Molasses can be replaced with treacle, golden syrup, or maple syrup; the notes also give 1/3 cup brown sugar as an alternative. If you cannot find tomato passata, use pureed canned tomato, or crushed tomato with 1 tablespoon tomato paste.
Ketchup can be replaced with the tomato sauce sold as ketchup in Australia, New Zealand, or Europe. In the United States, do not use American tomato sauce in its place.
Using dried beans
Use 2 cups dried beans in place of the canned beans. Cover them with plenty of water, bring to a boil for 1 minute, then remove from the heat, cover, and leave for 1 hour. Simmer over medium heat for 1 hour, then drain and use. The recipe notes estimate that 2 cups dried beans make about 5 1/2 cups cooked beans.
Storage
The beans keep in the refrigerator for days. To freeze, cool them and pack in zip-top bags or airtight containers. Reheat from frozen in the microwave, or thaw and reheat on the stove or in the microwave.
