Instructions

Dressing

  1. Step 1: Put the dressing ingredients in a jar and shake well.

Chicken

  1. Step 2: Put the chicken in a bowl. Add 2 tbsp of the dressing, the extra 1 tbsp lemon juice, and a pinch of salt and pepper. Mix well and marinate for at least 20 minutes, or up to 24 hours.

  2. Step 3: Heat the oil in a nonstick skillet over medium-high heat; if using bacon, you can use bacon fat instead. Add the chicken and cook for 2 minutes on each side for halved chicken breast, or 4 minutes on each side for thighs.

  3. Step 4: Transfer the chicken to a plate, cover loosely with foil and rest for 3 minutes. Slice.

Salad

  1. Step 5: Add the dill to the remaining dressing and shake.

  2. Step 6: Put the remaining salad ingredients in a bowl and top with the chicken.

  3. Step 7: Drizzle the dressing over the salad. Crumble the bacon on top if using, and serve immediately.

Notes

For a make-ahead meal, prepare the dressing and chicken, then store the cooked chicken whole in an airtight container. Keep the salad ingredients separately and the dressing in a jar; the components keep for up to 3 days. Warm the chicken before slicing and assembling.

For a chicken shortcut, use chopped or shredded rotisserie chicken tossed with 1.5 tbsp dressing; warm it gently before adding it to the salad.

If you prefer, replace the dill with coriander, chives or a pinch of dried herbs. The lettuce can also be another variety of your choice.
