  • Baking paper
  • Fork
  • Large bowl

Instructions

Loose granola

  1. Step 1: Preheat the oven to 150°C/300°F.

  2. Step 2: Combine the dry ingredients, excluding the dried fruit.

  3. Step 3: Combine the wet ingredients.

  4. Step 4: Combine the wet and dry ingredients. Taste and adjust to taste, adding more sweetener or fat if desired.

  5. Step 5: Spread the mixture on a baking tray and bake until golden, approximately 35–40 minutes, tossing twice.

  6. Step 6: Stir through the dried fruit. Cool, then store in an airtight container.

Clustered granola

  1. Step 7: Preheat the oven to 140°C/280°F. Line a large baking tray with baking paper.

  2. Step 8: Combine the wet ingredients, excluding the egg whites.

  3. Step 9: Combine the dry ingredients, including the dried fruit.

  4. Step 10: Whisk the egg whites with a fork until foamy.

  5. Step 11: Mix the wet and dry ingredients in a large bowl, then mix through the egg whites.

  6. Step 12: Spread the granola on the tray, making a hole in the centre like a doughnut.

  7. Step 13: Bake for 45 minutes without stirring, until golden. Check at 35 minutes.

  8. Step 14: Turn off the oven, leave the granola inside and open the oven door slightly. Leave it to cool in the oven; its colour will deepen and it will firm up.

  9. Step 15: Once cool, break into clusters. Store in an airtight container.

Notes

Flavour ideas

  • For a classic fruit-and-nut mix, combine butter, honey, almonds, pumpkin seeds, chopped dried fruit, cinnamon and vanilla.

  • For an apple-pie flavour, use almonds and dried apples with the classic combination.

  • For an oatmeal-raisin-cookie flavour, use butter, honey, raisins, vanilla, cinnamon and a pinch of allspice.

  • For blueberry pie, use dried blueberries, skip the cinnamon and add a dash of lemon essence.

  • Try dried goji berries, or combine almonds with orange blossom flavouring.

  • For maple pecan, use pecans, vanilla, butter and maple syrup.

If using brown sugar as the sweetener, add it to the dry ingredients.

About this recipe

Build a batch of homemade granola with your choice of nuts, seeds, dried fruit, sweetener and flavouring. Use the loose method for a mix you can stir, or the clustered method for larger crunchy pieces.

The same ingredient formula works for either style, but the methods differ: add dried fruit after baking for loose granola, or mix it in before baking for clusters.
