  • 20 cm/8-inch square tin

Instructions

Muesli bars

  1. Step 1: Using a wooden spoon, mix the add-ins in a large microwave-safe bowl.

  2. Step 2: Using a rubber spatula, mix the peanut butter and honey in a saucepan over medium heat until smooth. Once combined, turn the heat down to low. As soon as little bubbles appear around the edges, cook for 5 minutes, stirring constantly and scraping the base, until the mixture is like a very thick caramel. You should be able to draw a path across the base that holds before closing in on itself. Stay by the saucepan, as the mixture can catch easily.

  3. Step 3: Immediately pour the mixture over the oats and other add-ins, then mix with the wooden spoon. It takes some effort, but the mixture will come together. Stabbing and smearing it against the side of the bowl helps. If it gets too thick, microwave for 20 seconds on high to loosen the binder, then mix.

  4. Step 4: Line a 20 cm/8-inch square tin with a square of paper; there is no need to grease it. Add the muesli mixture and spread it into the corners using your hands and the wooden spoon. Press firmly for chewier bars.

  5. Step 5: Refrigerate for 2 hours, until firm, then cut into 10 bars. Cut the slab in half, then cut each half into 5 bars.

Notes

Almond butter is suggested as a substitute for peanut butter. Maple syrup can replace the honey if it cooks down to the same consistency.

Store the bars in an airtight container in the fridge for at least 2 weeks. They will be firmer and chewier when cold and soften at room temperature.
