Equipment

  • Large skillet
  • Shallow dish

Instructions

  1. Step 1: Cut the chicken breasts in half horizontally to make 4 steaks. Sprinkle both sides of each piece with salt and pepper.

  2. Step 2: Put the flour in a shallow dish. Coat the chicken in flour, then shake off the excess.

  3. Step 3: Melt most of the butter in a large skillet over high heat, holding back about 1 tsp for later.

  4. Step 4: Add the chicken to the skillet and cook for 2–3 minutes, until golden. Turn and cook the other side for 1 minute.

  5. Step 5: Turn the heat down slightly to medium-high.

  6. Step 6: Make a little space in the pan and add the garlic, then top it with the remaining butter. Stir the garlic briefly once the butter melts.

  7. Step 7: Add the vinegar, soy sauce and honey. Stir or shake the pan to combine. Bring the sauce to a simmer, then simmer for 1 minute or until slightly thickened.

  8. Step 8: Turn the chicken to coat it in the sauce. If the sauce gets too thick, add a little water and stir.

  9. Step 9: Remove the pan from the stove immediately. Put the chicken on plates and drizzle over the remaining sauce.

Notes

For a gluten-free version, use cornflour or cornstarch in place of flour; the chicken may brown less evenly. Light or all-purpose soy sauce works well here; dark soy sauce can dominate the flavor.
