Instructions

Instructions

  1. Step 1: Heat the oil in a large pot over medium heat. Add the garlic and onion and cook slowly for 3 to 4 minutes, until the onion is translucent and sweet.

  2. Step 2: Increase the heat to medium-high. Add the zucchini and capsicum and cook for 1 1/2 minutes.

  3. Step 3: Add the remaining ingredients except the pasta and broccoli. Stir until the tomato paste dissolves.

  4. Step 4: When the liquid starts bubbling, reduce the heat to medium. Add the pasta and stir. Place the broccoli on top and push it into the liquid.

  5. Step 5: Cover and cook for 5 minutes.

  6. Step 6: Remove the lid and cook for another 3 to 4 minutes, stirring frequently, until the pasta is almost cooked through and most of the liquid has been absorbed.

  7. Step 7: Stir through half the cheese, if using. Adjust the salt and pepper to taste.

  8. Step 8: Top with the remaining cheese and cover the pot. Leave for 1 minute, until the cheese has melted and the pasta is cooked.

  9. Step 9: Garnish with parsley and serve immediately. Transfer leftovers to a serving dish rather than leaving them in the pot, as residual heat will overcook the pasta.

Notes

You can swap the vegetables for 7 to 8 cups of chopped or sliced vegetables. Cook cauliflower and broccolini on top of the pasta, as you would the broccoli.

Any short pasta will work, including penne, ziti, macaroni or spirals. If the pasta is still undercooked and the liquid has reduced, add a little water. Avoid overcooking.
