Instructions

Meatballs

  1. Step 1: Grate the onion into a large bowl using a box grater, collecting about 1/2 cup of grated onion and its juices.

  2. Step 2: Add the bread and mix so the onion juice soaks into it and the bread disintegrates. Set aside while you prepare the other ingredients, about 5 minutes.

  3. Step 3: Add the remaining meatball ingredients and mix well with your hands.

  4. Step 4: Measure out a heaped tablespoon of mixture and roll it lightly into a ball. Repeat with the remaining mixture.

  5. Step 5: Heat 1 1/2 tbsp olive oil in a large non-stick frying pan over medium-high heat. Add the meatballs and brown them all over, about 3–4 minutes.

  6. Step 6: When browned but not cooked through, carefully transfer the meatballs to a plate.

Sauce and serving

  1. Step 7: Heat 1 tbsp olive oil in the same pan.

  2. Step 8: Add the onion and garlic and sauté for 2–3 minutes, until translucent. Add the remaining sauce ingredients and bring to a simmer. Reduce the heat to medium-low so the sauce bubbles gently.

  3. Step 9: Carefully transfer the meatballs and any juices on the plate into the sauce.

  4. Step 10: Cook the meatballs for 8–10 minutes, turning and stirring occasionally. Adjust the sauce seasoning with salt and pepper to taste.

  5. Step 11: While the meatballs cook, cook the pasta of your choice.

  6. Step 12: Serve the meatballs over the pasta, garnished with extra Parmesan and parsley if using.

Notes

Ingredient substitutions

  • Use other bread in place of the white sandwich bread; remove the crust and tear or chop it into small pieces. Slightly stale bread is fine. You can also use 1/2 cup panko breadcrumbs, though the meatballs will be less soft.

  • If you prefer, replace the ground pork with 1 lb / 500 g ground beef, or use another ground meat.

  • For the fresh parsley in the meatballs, substitute 1 1/2 tbsp dried parsley, or use an equal-amount blend of dried oregano, thyme, basil and parsley. An Italian herb mix also works.

  • If you can’t find tomato passata, use puréed canned tomatoes or crushed canned tomatoes. Passata may also be labelled tomato purée in the US and Canada.

Oven option

For a baked option, place a rack on a tray and spray it with oil. Arrange the meatballs on the rack, spray them with oil, and bake at 200°C/400°F for 20 minutes, until browned. Simmer them in the sauce for a few minutes to bring the flavours together.
