Instructions
Step 1: Mix the seasoning ingredients. Drizzle 1 tablespoon of oil over the chicken and mix to coat. Sprinkle with the seasoning and toss to coat.

Step 2: Heat 1 tablespoon of oil in a large skillet over high heat. Add the chicken and cook for 2 minutes. Turn and cook for 1.5 minutes. Remove from the skillet, rest for 2 minutes, then chop.
Step 3: In the same skillet, add the onion and garlic and cook for 1 minute. Add the capsicum and cook for 2 minutes, until the onion is translucent.
Step 4: Add the refried beans, diced chicken and water. Stir and cook for 2 minutes, until the mixture reduces slightly. The filling should be thick and juicy, not watery or dry. Let it cool for 5 minutes to thicken.

Step 5: Gently warm the tortillas in the microwave to make them pliable, then lay them on a work surface.
Step 6: Place rice on the lower third of each tortilla. Top with chicken filling, corn and cheese, then sprinkle with coriander. Fold up burrito-style.
Step 7: To toast, either pan-fry over medium-high heat without oil for 2 minutes on each side, until the tortilla is crisp and the cheese melts a little, or wrap tightly in foil and bake for 10 minutes at 180°C/350°F.
Step 8: Serve with a sauce of your choice, or add hot sauce. Suggested accompaniments include avocado sauce, guacamole, sour cream, restaurant-style salsa, queso or nacho cheese dip.
Step 9: Wrap extra burritos for freezing and reheat when ready to eat.
Notes
Make-ahead and storage
Wrap burritos in cling wrap or foil. Refrigerate for up to 4 days or freeze. To reheat, thaw overnight and warm in the oven, wrapped in foil, for 15 minutes at 180°C/350°F. To reheat from frozen, wrap in foil and bake for 40 minutes at 180°C/350°F.
Refried bean substitute
To make a bean substitute, sauté 1 minced garlic clove in a little oil until golden. Add 1 can of pinto, red kidney or black beans with 1/4 cup of the can liquid and 1/2 teaspoon each of cumin, onion powder and paprika. Stir until thoroughly heated, then mash or purée. Other beans work too, though the color will differ.
Rice
For 2.5 cups of cooked white rice, start with 1 cup of uncooked rice.
