Instructions

Prepare and cook the chicken

  1. Step 1: Put the taco seasoning ingredients in a bowl. Add 2 tablespoons of the chicken broth and mix to make a loose paste.

  2. Step 2: Add the chicken and turn to coat.

  3. Step 3: Heat the oil in a large skillet over medium-high heat. Cook the chicken for 3 minutes on each side, until lightly seared. Reserve the marinade left in the bowl.

  4. Step 4: Transfer the chicken to a shallow dish.

  5. Step 5: Return the skillet to the stove and reduce the heat to medium. Add the remaining chicken broth, tomato paste, sugar, and any marinade left in the bowl. Mix to dissolve, scraping the base of the pan, and bring to a simmer.

  6. Step 6: Meanwhile, shred the chicken with forks or chop it; it may still be raw inside.

  7. Step 7: Return the chicken to the sauce, toss, and simmer for 2 to 3 minutes, until the sauce reduces to a thin syrup consistency. Add water if it reduces too quickly. Adjust the salt to taste.

  8. Step 8: Transfer the chicken and all the sauce to a serving bowl.

To serve

  1. Step 9: Warm the taco shells or tortillas according to the package directions.

  2. Step 10: Fill them with chicken, making sure it is coated with the sauce.

  3. Step 11: Top with tomato, avocado, onion, coriander, lettuce, and sour cream.

Notes

For the lime juice, lemon juice, cider vinegar, rice vinegar, orange juice, apple juice, or another plain fruit juice can be used to help make the seasoning paste. If using fruit juice, the sugar in the sauce can probably be omitted.

Chicken breast can be used instead of boneless, skinless chicken thighs. Cayenne pepper can be omitted or adjusted to taste.
