  2. Step 2: If possible, use 2 skillets to cook the chicken and vegetables at the same time.

Vegetables

  1. Step 3: Heat 1 tbsp oil in a heavy-based skillet over high heat until smoking. Add enough vegetables to cover the base of the pan in a single layer without too much overlapping. Spread them out and leave for 45 seconds to char. Cook in batches if needed.

Sliced red, yellow and green peppers with sliced onion in a tray.
  2. Step 4: Toss quickly, then spread the vegetables out again. Sprinkle with salt and pepper. Leave for 45 seconds, toss and spread them out, then leave for another 45 seconds. Transfer to a platter and repeat with the remaining vegetables.

Chicken

  1. Step 5: Heat 1 tbsp oil in a large skillet over medium-high heat. Add the chicken and cook for 3 to 4 minutes, until caramelized. Turn and cook the other side for 3 to 4 minutes.

  2. Step 6: Transfer the chicken to a plate and cover loosely with foil. Rest for 3 minutes, then slice.

To Serve

  1. Step 7: Warm the tortillas using your chosen method.

  2. Step 8: Pile peppers and onion onto a tortilla. Top with chicken, drizzle with sour cream and squeeze lime juice over it. Fold to serve.

Notes

Variations

For the orange juice, use pineapple, apple or mango juice, or chicken broth with 1 tsp sugar. If none is available, omit it and add 1/2 tsp each onion powder, garlic powder, coriander powder and paprika, plus 1 tsp sugar; the flavor will be somewhat different.

If using chicken breast, cut 2 large breasts in half horizontally to make 4 thinner pieces. Other topping options include avocado sauce, restaurant-style salsa, pico de gallo or fresh coriander leaves.
