Instructions
Step 1: Preheat the oven to 200°C / 400°F (180°C fan).
Step 2: Heat the olive oil in a cast-iron skillet over medium-high heat, or use another ovenproof pan. Cook the onion, garlic and capsicum for 3 minutes.
Step 3: Add the beef and cook, breaking it up as you go, until no raw meat is visible. Add the spices and cook for 1 minute.
Step 4: Add the kidney beans and passata. Stir, then bring the mixture to a simmer.
Step 5: Scatter the jalapeño over the surface, then top with the cheese.
Step 6: Bake uncovered for 15 minutes, then remove from the oven.
Step 7: Scoop into bowls and serve with corn chips or tortillas and your favorite Mexican toppings, such as guacamole or avocado sauce, pico de gallo or restaurant-style salsa, fresh coriander, and sour cream. Dunk with corn chips or use the filling for burritos or tacos.
Notes
Leftovers keep for 3 days in the refrigerator or 3 months in the freezer.
For a different variation, the beef can be replaced with chicken, turkey, pork or lamb. Passata can be replaced with crushed tomatoes or tomato puree.
If using mozzarella, add a handful of Parmesan for extra flavor.
