Equipment

  • Small bowl
  • Large non-stick pan

Instructions

  1. Step 1: In a small bowl, mix the cornflour or cornstarch with the water until smooth and lump-free. Add the remaining sauce ingredients and mix.

  2. Step 2: Drain the tofu and cut it into 5 mm slices. Use your fingers to crumble it into mince-like pieces, leaving the crumbs fairly coarse; you can break them up more as they cook.

  3. Step 3: Heat the oil in a large non-stick pan over high heat. Cook the onion, garlic and carrot for 1 minute. Add the green beans and mushrooms and cook for 2 minutes; the green beans should still be firm.

  4. Step 4: Add the tofu and toss it through the vegetables. Pour in the sauce and stir for 1 minute, or until it thickens and coats the mixture. If the sauce evaporates too quickly, add a splash of water.

  5. Step 5: Transfer the filling to a bowl. Set it out with the lettuce leaves, green onion, peanuts and sriracha.

  6. Step 6: Spoon filling into a lettuce leaf. Drizzle with sriracha and sprinkle with peanuts and green onion. Bundle or fold the leaf and eat.

Notes

Use firm or extra-firm tofu, not silken tofu. The tofu does not need to be pressed.

For the sauce, vegetarian oyster sauce or hoisin can replace oyster sauce. Mirin, cooking sake or dry sherry can replace the Chinese cooking wine. The vegetables can be swapped for other sauté-able vegetables, and lettuce leaves with a cup shape or flexible enough to fold will work.

Leftover filling keeps in the refrigerator for 3 days. It is not suitable for freezing.
