Equipment

  • Roasting pan
  • Stovetop
  • Whisk
  • Bowl
  • Jug
  • Thermos

Instructions

  1. Step 1: Set the roasting pan over medium heat on the stovetop. A single burner is fine, though it is ideal if the pan fits across two. Leave the garlic, onion, and other flavorings in the pan.

  2. Step 2: When the drippings start sizzling or bubbling, add the flour. Cook for 1 minute, stirring constantly.

  3. Step 3: Gradually pour in the chicken broth, mixing constantly. Once it is all added, the gravy should be lump-free. If needed, whisk around the onion and other flavorings.

  4. Step 4: Simmer until the gravy thickens to your liking; it will thicken more as it cools. Adjust the salt and pepper to taste at the end.

  5. Step 5: Strain the gravy into a bowl, pressing the juices out of the onion, garlic, and other flavorings, then discard them.

  6. Step 6: Pour the gravy into a jug and serve with turkey. To keep it warm, store it in a thermos.

Notes

For roasting, use a turkey recipe that calls for at least 1 1/2 cups of liquid in the pan at the start; otherwise the drippings can burn and turn bitter.

For a gluten-free version, replace the flour with a cornflour or cornstarch slurry: mix 2 teaspoons of cornflour with water for each cup of broth, then simmer until thickened.

Keep the gravy in the refrigerator for up to 5 days or freeze it for up to 3 months. It will set when chilled and loosen again when reheated.
