Japanese Slaw

Equipment
- Jar
- Large bowl
- Serving platter
Instructions
Step 1: Shake the dressing ingredients together in a jar until the mayonnaise is fully emulsified. Taste and add more sugar if desired.
Step 2: Put the cabbage, carrot, green onion, half the edamame and half the seaweed salad in a bowl. Add about three-quarters of the dressing and toss. The seaweed will mostly remain in clumps.

Step 3: Set the salad aside for 15 minutes, allowing the cabbage to wilt slightly.
Step 4: Toss the salad again and pile it onto a serving platter or into a bowl. Drape the remaining seaweed salad over the top in clumps, add the remaining edamame and drizzle with the remaining dressing. Serve.
Notes
Use pre-dressed Japanese seaweed salad; its sweet sesame dressing contributes to the flavor of the slaw.
Rice vinegar can be replaced with cider vinegar. Use any mayonnaise in place of Japanese mayonnaise, or leave it out. Wasabi is optional; adjust it to taste.
For the cabbage measurements, pack the shredded cabbage tightly into the measuring cups. Shred the carrot finely; use a julienne shredder or a box grater.
