Honey mustard dressing
Instructions
Step 1: Shake the dressing ingredients together in a jar.
Step 2: Halve the pears and scoop out the cores. Place them cut-side down and slice into 3 mm / 0.12-inch slices.

Tip: The slices should bend slightly when picked up with a fork, rather than being paper-thin or thick enough to crack when pierced.
Step 3: Spread the walnuts on a tray and toast in a 180°C / 350°F oven for 8 minutes, or until they smell nutty. Leave some whole and break some in half by hand.
Step 4: In a large bowl, toss the rocket with 2 tablespoons of the dressing.
Step 5: Pile one-third of the rocket onto a platter. Scatter over one-third of the pears, walnuts and crumbled blue cheese. Repeat twice more. Drizzle with the remaining dressing just before serving.

Notes
Choose any ripe pear variety. Almonds or pecans can replace the walnuts. For the dressing, mild vinegar such as white wine, champagne or sherry vinegar can stand in for cider vinegar.
If you are not assembling the salad within 30 minutes, lightly drizzle the sliced pears with lemon juice to help prevent browning.

About this recipe
Juicy pears, peppery rocket, blue cheese and toasted walnuts bring cheeseboard-style pairings to a fresh salad. A lightly sweet honey mustard dressing ties it together.

Serve this salad as a starter, light lunch or side dish. Use ripe pears and blue cheese that is creamy but firm enough to crumble.
