Herb and green onion butter
Optional garnishes
Equipment
- Oven
- Medium bowl
- Large tray
- Foil
- Platter
Instructions
Step 1: Clean the mushrooms; see the notes for cleaning guidance.
Step 2: Preheat the oven to 200°C / 390°F (180°C fan).
Step 3: Mix the herb and green onion butter ingredients together in a medium bowl.

Step 4: Place the mushrooms gill-side up on a large tray. Spread the butter mixture over the mushroom surfaces. Cover with foil to help preserve the herbs’ green color.
Step 5: Bake for 25 minutes, until the mushrooms are tender.
Step 6: Arrange the mushrooms on a platter with all the butter and juices from the tray. Scatter the thyme stalks and extra scallions over the mushrooms, then serve.

Notes
Use any type of large mushroom that can hold the butter. Clean away dirt with a cloth or paper towel, or use a pastry brush to reach crevices. The gills are edible; if you prefer to remove them, scoop them out gently with a spoon. Trim a long stem level with the edge of the mushroom, or snap it off.
Store fresh mushrooms in a breathable bag, such as a brown paper bag, or wrapped in a tea towel. Plastic bags and containers can trap moisture.

About this recipe
Roast large flat mushrooms with a rich butter mixed with green onion, parsley and thyme. The mushrooms cook gill-side up, letting the herb butter settle into their caps.

Serve them as a vegetarian main for 3–4 people, or as a starter or side for 6–8.
