Instructions
Step 1: Put the sausage patty ingredients in a bowl and mix well with your hands. Divide the mixture into 8 portions and form patties about 1 cm / 0.4 inch thick. Make a shallow dent in the middle of each patty to help prevent it from doming as it cooks.
Step 2: Heat 1 tablespoon of oil in a large nonstick pan over medium-high heat. Cook half the patties for 2 minutes on each side, until golden. Transfer them to a paper towel-lined plate. Heat the remaining oil and cook the remaining patties.
Step 3: Serve with ketchup.
Notes
Make-ahead and storage
Freeze uncooked patties for up to 3 months. Freeze them in a single layer on trays, then stack them in an airtight container, or place paper between the patties. Thaw before cooking. Refrigerate cooked leftovers for up to 3 days.
If you don’t have dried sage, use 1/2 teaspoon paprika, 1/4 teaspoon cumin, and 1/4 teaspoon extra garlic powder instead. The flavor will be different.
