Instructions

Roast potatoes

  1. Step 1: Preheat the oven to 200°C / 400°F (180°C fan).

  2. Step 2: For the smashed garlic, place the side of a knife on an unpeeled garlic clove. Hit firmly with the palm of your hand so the garlic bursts open a little but mostly stays intact.

  3. Step 3: Put the potatoes on a tray and push them together. Drizzle with oil, sprinkle with salt and pepper, and toss to coat. Toss through the thyme and garlic, then spread the potatoes out on the tray.

Tip: Arrange the less golden cut sides face down for the next roasting period to help them color.

  4. Step 4: Roast for 30 minutes, then toss. Roast for a further 25 to 35 minutes, or until the potatoes are golden. Toss again before serving.

Four stages of potatoes being tossed, put in the oven and roasted on a tray

Tip: If potatoes are stuck to the tray, leave them rather than pulling off their crust; they will release when ready.

  5. Step 5: Sprinkle with parsley, if using, and serve immediately.

Notes

Ingredient and leftover notes

Use small potatoes that can be cooked with their skins on. Larger potatoes can be cut into pieces roughly the same size.

Fresh thyme or rosemary can be replaced with dried herbs. Use about 1 teaspoon and add it halfway through roasting so it does not burn. Avoid minced garlic, which can burn; smashed, unpeeled cloves flavor the potatoes while staying mostly whole.

Leftovers keep in the refrigerator for up to 3 days. To revive them, flatten them slightly and pan-fry in a little oil until golden and crisp.
