Instructions
Step 1: Place the marinade ingredients in a resealable bag. Massage the bag to combine them.
Step 2: Add the chops and massage the bag to coat them in the marinade. Marinate for 1–24 hours.
Tip: Allow at least 1 hour for thin chops or 3 hours for thick chops.
Step 3: Take the chops out of the refrigerator 20 minutes before cooking.
Step 4: Brush the barbecue grill with oil or drizzle oil into a pan, then heat over medium-high. Add the pork and cook for 4 minutes, or until the underside is caramelized and the pork releases from the grill. Turn the chops and cook for 3 minutes.
Tip: For thin chops, use the cooking times in the notes.
Step 5: Baste both sides with the remaining marinade from the bag, then cook the basted side for 30 seconds before serving. The chops should develop a crust.
Step 6: Transfer the chops to a plate and cover loosely with foil. Rest for 3 minutes before serving.
Notes
The marinade works with quick-cooking pork cuts such as chops, steaks or tenderloin. For chops thicker than 2 cm, start cooking them on the stove and finish them in a 180°C / 350°F oven until they reach an internal temperature of 145°F / 63°C.
For 1.25 cm-thick chops, the notes give cooking times of 3 minutes on the first side and 2 minutes on the second, followed by 30 seconds on each side while basting. For 2 cm-thick chops, cook for 4 minutes on the first side and 3 minutes on the second, followed by 45 seconds on each side while basting.
If the sugar in the marinade starts to burn, reduce the heat. Chops should release from the grill when they are ready to turn.
