Instructions
Method
Step 1: Mix the garlic dipping sauce ingredients in a bowl. Set aside for at least 20 minutes to let the flavours develop.
Step 2: Cut the haloumi into fries about 1.5 cm thick. Their length will depend on the shape of the cheese. For 20 even pieces, cut it into 5 slices lengthwise, then halve each slice.

Step 3: Pat the haloumi mostly dry with tea towels.
Step 4: Set out 3 bowls large enough to toss the haloumi. Put the eggs in one bowl, mix the flour dredge ingredients in another, and mix the crumbing ingredients in the third.
Step 5: Dip a haloumi fry in the flour and shake off the excess. Dip it in egg and let the excess drip off. Coat it in breadcrumbs, pressing them on to adhere, then place it on a tray. Repeat with the remaining fries.

Tip: Crumb 2 fries at a time if you like. Toss the bowl to coat the fries in breadcrumbs without handling them more than needed.
Step 6: Heat the oil in a medium saucepan over high heat until it reaches 180°C/350°F.
Tip: If you do not have a thermometer, test the oil with a small cube of white bread. It should turn golden and crisp in 15 seconds.
Step 7: Fry 5 haloumi sticks at a time for 1 1/2 minutes. Drain them on a paper towel-lined tray, then repeat with the remaining haloumi.

Step 8: For the oven method, spread the breadcrumbs on a tray, spray them generously with oil, and bake at 180°C/350°F (160°C fan-forced) for 8 to 10 minutes, shaking the tray halfway through, until golden. Coat the haloumi fries as directed, then bake them on a rack at the same temperature for 20 minutes or until crunchy.

Tip: Toasted breadcrumbs give the baked fries a more even golden colour.
Step 9: For the air-fryer method, preheat the air fryer to 200°C/390°F for 5 minutes. Spray the fries with oil and spray the basket. Arrange the fries in a single layer in an air fryer with a capacity of at least 7 L/qt. Cook for 9 minutes, until crisp and golden.

Step 10: Serve hot with the garlic yogurt dipping sauce.
Notes
Variations and leftovers
Use ordinary breadcrumbs instead of panko, if needed. For the herb mix, use a combination of dried oregano, basil, and parsley. Ordinary paprika can replace smoked paprika, and black pepper can replace white pepper.
Reheat leftover fries in a 180°C/350°F oven for 10 minutes.

About this recipe
Panko gives these haloumi fries a crisp, golden coating around warm, salty cheese. Shallow-fry them for the quickest, crunchiest result.

Pair the fries with a tangy garlic yogurt dip for a snack, starter, or party nibble.

You can also bake the fries or cook them in an air fryer; the coating may split slightly because these methods take longer than frying.
