Instructions
Meatballs
Step 1: Preheat the oven to 220°C / 430°F (standard) or 200°C / 390°F (fan/convection).
Step 2: Grate the onion into a large bowl using a box grater. Add the breadcrumbs and mix to coat. Leave to soak for a few minutes.
Step 3: Add the remaining meatball ingredients. Mix well with your hands until combined.
Step 4: Measure level tablespoons of the mixture and dollop them onto the work surface. Roll each portion into a ball.

Step 5: Place a rack on a baking tray, if using. Spray the rack generously with oil and arrange the meatballs on it.
Step 6: Bake for 25 minutes or until browned. Remove the tray from the oven and immediately transfer the meatballs to a large bowl so they do not stick to the rack.
Step 7: Drizzle with enough sauce to coat the meatballs. Toss gently, transfer to a serving bowl or plate, and garnish with chives if desired.

Step 8: Serve with toothpicks and the remaining sauce for dipping.

Sweet and sour sauce
Step 9: Combine the sauce ingredients in a small saucepan over medium heat. Whisk to combine.
Step 10: Bring to a simmer, stirring or whisking regularly. Simmer until the sauce thickens to a syrup consistency, or thicker if you prefer (about 3 minutes).

Step 11: Put the meatballs in a bowl and pour over a little sauce to coat. Serve with the remaining sauce and garnish with chives.
Notes
Make-ahead and storage
Cool the meatballs uncovered, then cover and refrigerate or freeze them. Store the sauce separately. If frozen, thaw the meatballs before reheating in the microwave. Warm the sauce slightly, then toss the meatballs with some sauce and serve the rest alongside.
Variations
Use all beef or all pork, or substitute chicken or turkey for the beef and pork. For a sweeter sauce, stir in more sugar; for more tang, add more vinegar.
The rack is optional; it helps the meatballs stay round and brown more evenly. The sauce makes about 1 cup.
