Notes

The sauces can be made ahead. Keep the Thai sauce to no more than one day ahead for the freshest flavour.

The recipe suggests pairing sauces with contrasting flavours: choose the cocktail or Thai sauce alongside one of the creamy sauces. Marie Rose, tartare, and the family favourite have more similar flavours.

Serve with freshly cooked prawns. Go easy on added salt, as prawns are already salty; taste the sauce with a prawn to check the seasoning.

For a generous amount of prawns, the notes suggest 250 g of whole uncooked prawns per person. For a larger starter spread with other nibbles, they suggest 100 g per person.
