Instructions
Step 1: If using whole prawns, remove the heads and peel them. Leave a few whole for decoration, if you like. With medium-sized, already-cooked prawns, deveining is usually unnecessary; it is difficult to do and barely noticeable, especially with the sauce.

Step 2: Mix the sauce ingredients together in a small bowl.

Step 3: Toss the prawns with the sauce.
Step 4: Place some lettuce in serving dishes. Use martini glasses, small bowls or another small serving vessel, or serve the lettuce in small cups made from lettuce leaves.
Step 5: Top with the prawns. Serve garnished with lemon wedges and a sprinkle of parsley, if using.
Notes
For make-ahead prep, peel the prawns and refrigerate them in an airtight container for up to 24 hours. Make the sauce and refrigerate it for up to 3 days. Assemble just before serving; if assembled more than about 3 hours ahead, the sauce may pool on the lettuce.
