Instructions
Meatballs
Step 1: Preheat the oven to 220°C/430°F for a standard oven or 200°C/390°F for a fan or convection oven.
Step 2: Place a rack on a baking tray. The rack is optional, but it helps the meatballs keep a rounder shape.
Step 3: Put all the meatball ingredients except the oil spray in a bowl and mix well with your hands. Add the extra breadcrumbs only if needed; chicken mince can sometimes be quite wet. Scoop up one slightly heaped tablespoon of mixture and roll it into a ball about 3 cm/1.25 inches in diameter.

Step 4: Spray the rack well with oil and arrange the meatballs on it.
Step 5: Spray the meatballs generously with oil, then bake for 20–25 minutes, or until lightly browned.
Step 6: Serve warm with the sauce. Garnish with coriander and chillies if desired.

Step 7: Put the sauce ingredients in a bowl and mix. Set aside for at least 10 minutes before using.
Notes
To make ahead, freeze the raw meatballs on a tray, then transfer them to bags or containers. Thaw before baking. Cooked meatballs can be reheated in the microwave.

About this recipe
These baked meatballs bring together lemongrass, ginger, garlic, chilli, coriander and fish sauce. Make them with pork or chicken, and serve them warm with sweet chilli dipping sauce.

Kaffir lime leaves add an earthy, lime-like note, but they’re optional. A bowl of sweet chilli sauce mixed with garlic and lime juice makes a quick dip.
