Instructions
Make and serve
Step 1: Place the dressing ingredients and any chosen optional flavourings in a jar. Shake well until the mustard dissolves.
Step 2: This makes enough for a large leafy salad for 4 people, using 4 big handfuls of lettuce, or for a garden salad.
Step 3: Without garlic or fresh herbs, the dressing keeps for weeks in the fridge. Shake it well before using.
Step 4: Use the dressing on fresh salad, steamed or boiled vegetables, or roasted vegetables. Make sure salad leaves are dry so the dressing sticks. For vegetables, add the dressing while they are hot so they absorb it. Drizzle and toss well just before serving.

Notes
Adjust the flavor
If the dressing tastes too tangy, add more oil or a little sugar or honey. If it is not tangy enough, add more vinegar. Use either sugar or honey, not both.
Apple cider vinegar, white wine vinegar, balsamic, red wine vinegar, sherry vinegar, champagne vinegar, plain white vinegar and rice wine vinegar are all options. White wine vinegar is milder; plain white vinegar is sharper.
Use more subtle fresh herbs, such as parsley, dill or chives, and less of stronger herbs, such as sage, thyme or rosemary. Oregano, thyme or a mixture of dried herbs are also options.
Without garlic or fresh herbs, the dressing keeps for weeks in the fridge; shake it before using. Fresh garlic shortens storage to 3 days, and fresh herbs may brown in a few days.

About this recipe
This everyday dressing combines vinegar or lemon juice, extra virgin olive oil, Dijon mustard, salt and pepper. Shake it in a jar until the mustard dissolves and the dressing thickens.
