Instructions

  1. Step 1: Melt the butter in a pot over medium heat. Add the onion, garlic and ginger. Cook slowly, stirring now and then, for 10 minutes, until lightly golden and the onion is sweet.

  2. Step 2: Turn the heat to high. Add the curry powder and turmeric, and stir for 1 1/2 minutes.

  3. Step 3: Add the remaining ingredients and stir. Bring to a simmer, cover, and adjust the heat to low or medium-low so the curry simmers gently.

  4. Step 4: Simmer for 30 minutes, then remove the lid and simmer for a further 10 minutes to reduce the sauce.

  5. Step 5: Cook until the lentils are soft and the sauce is thick and creamy. If it is too thick, add water. If it is too thin, simmer uncovered; it will thicken quickly.

  6. Step 6: Stir in half the coriander, then taste and add more salt if needed.

  7. Step 7: Serve over basmati rice, topped with the remaining coriander and a dollop of yogurt. Cauliflower rice is another serving option.

Notes

Variations and storage

For the garlic and ginger, powdered versions can be used instead: use 1 teaspoon of each and add them with the curry powder. Red split lentils, canned lentils, and yellow or green split peas are listed with a 25-minute uncovered cook time. Older dried lentils may take longer; add water as needed until tender. French lentils are not recommended for the creamy, thick texture.

Refrigerate leftovers for up to 5 days or freeze for up to 3 months. Thaw and reheat, stirring well; add a little water to thin if needed.
