Instructions

  1. Step 1: Preheat the oven to 180°C/350°F (160°C fan).

  2. Step 2: Mix the curry paste, coconut milk, and stock in a 22 x 33 cm / 9 x 13 inch baking dish, preferably glass or ceramic. Add the onion, potato, star anise, cinnamon, and lamb.

  3. Step 3: Turn the shanks to coat them in the sauce, then cover the dish with foil.

  4. Step 4: Bake for 2 hours. Remove the foil and bake for a further 1 hour for small shanks or 1.5 hours for medium to large shanks, turning the lamb twice to brown evenly, until the meat is tender enough to tease apart easily with two forks.

  5. Step 5: Transfer the lamb to a plate. Carefully skim about 1/3 cup of excess fat from the surface; tilting the dish makes this easier. Mix the sauce in the baking dish until it has reduced to a syrupy thickness.

  6. Step 6: Serve the lamb and sauce over jasmine rice, garnished with chilli and coriander. For a larger meal, serve the curry on a platter to share.

Notes

For a deeper flavour, make the curry a day ahead. Refrigerate leftovers for 4 to 5 days or freeze for up to 3 months. Thaw frozen curry before reheating.

The recipe notes recommend reheating covered in a 180°C/350°F oven for about 30 minutes, or microwaving on low. Add water to loosen the sauce if needed.
