Equipment
- Bowl

- Potato masher
Instructions
Step 1: Place the eggs in a bowl and crush them with a fork. Once they are mostly broken up, mash them thoroughly with a potato masher. Smaller egg-white pieces make a creamier filling.

Step 2: Add the remaining filling ingredients and gently stir to combine. Taste and add more salt if desired, a little at a time.

Step 3: Butter the bread. Divide the filling among 4 slices and spread it evenly to the edges. Top with the remaining bread slices. Trim the crusts if desired, then cut as you like.
Tip: For neater cuts, refrigerate the sandwiches for 1 hour before cutting to firm the filling.
Step 4: Serve at room temperature for the best flavor.
Notes
To prepare the soft-boiled eggs, bring 10 cm/4 inches of water to a boil, gently add the eggs and cook for 8 minutes. Cool them for 10 minutes in cold water, then peel them in the water.
For neater cuts, refrigerate the assembled sandwiches for 1 hour before cutting. Store leftovers in the fridge for up to 2 days; serve at room temperature.

About this recipe
Soft-boiled eggs give this filling a creamy texture, with mayonnaise, Dijon mustard, chives and black pepper for flavor. Use soft white sandwich bread to keep the filling from squeezing out as you bite.

For tea-style sandwiches, trim the crusts and cut each sandwich into fingers. Chopped green onion can stand in for the chives.
